  3. 700 gr Harina 000
  4. c/n Sal
  5. chorrito Aceite
  6. c/n Agua

  9. 500 gr ricota
  10. c/n Nuez moscada
  11. 5 cucharadas soperas Pan rallado
  12. c/n Sal
  13. 1 huevo
  14. c/n Queso mozzarella

  1. Para la masa: armar una corona con la cantidad de harina indicada, agregar la sal en los bordes, en el medio agregar, los huevos y el aceite. Empezar a integrar todo, si notan que falta líquido agregar de a poco agua hasta formar una masa lisa.
  2. Una vez formada la masa, separar en bollos y dejar reposar 30 minutos, (mientras tanto hacen el relleno) luego estirar.
  3. Para el relleno: Colocar la calabaza cortada a la mitad y sin semillas en un recipiente apto para microondas y cubrir con papel film (pincharlo para que no se hagan globos). Cada microondas es diferente, en el mío tardo 25 minutos. Otra opción es llevarla al horno en una asadera.
  4. Cuando este lista, sacarle el puré de la calabaza con una cuchara y colocarla en un recipiente.
  5. En este recipiente agregar al puré, la ricota, el pan rallado (se utiliza porque la calabaza tiende a desprender agua luego de la cocción y este la absorbe), condimentar con sal y nuez moscada a gusto. Integrar todo con un tenedor, por último agregar el huevo y mezclar.
  6. Con la masa ya estirada hacer las tapas, o en mi caso use el molde de los sorrentinos que se consigue en bazares. Luego rellenar y colocar un cuadradito de queso en el medio, tapar con masa y cortarlos.
  7. Una vez listos, calentar agua en una olla sin que llegue a ebullición (que no haga muchas burbujas porque se pueden abrir los sorrentinos), agregarlos y sacarlos entre 7 o 8 minutos. Pueden sacar uno para probar como están y se van fijando.
  8. Servirlos acompañados de una rica salsa y a disfrutarlos!
